{"id":233,"date":"2015-12-22T09:48:24","date_gmt":"2015-12-22T09:48:24","guid":{"rendered":"http:\/\/www.7wonderstravel.com\/blog\/?p=233"},"modified":"2016-04-19T12:02:59","modified_gmt":"2016-04-19T09:02:59","slug":"melomakarona-a-greek-treat","status":"publish","type":"post","link":"https:\/\/www.7wonderstravel.com\/blog\/2015\/12\/melomakarona-a-greek-treat\/","title":{"rendered":"Melomakarona &#8211; A Greek Treat"},"content":{"rendered":"<p><span style=\"color: #000000;\"><strong>The best part of the festive season is getting together with friends and family.\u00a0So why not prepare a special treat of Greek Melomakarona, you will all love the result.<\/strong><\/span><\/p>\n<p><strong>For the syrup<\/strong><\/p>\n<ul>\n<li>7 cups sugar<\/li>\n<li>8 cups water<\/li>\n<li>2 cups honey<\/li>\n<li>2 cinnamon sticks<\/li>\n<li>2 wide strips of orange peel<\/li>\n<\/ul>\n<p><strong>For the Dough:<\/strong><\/p>\n<ul>\n<li>5 cups pastry flour<\/li>\n<li>2 tsp. baking powder<\/li>\n<li>1\/2 cup coarsely ground walnuts<\/li>\n<li>zest of 1 orange<\/li>\n<li>2 tsp cinnamon<\/li>\n<li>1\/2 tsp ground clove<\/li>\n<\/ul>\n<p><strong>Wet Ingredients<\/strong><\/p>\n<ul>\n<li>1 1\/2 cups vegetable oil<\/li>\n<li>3\/4 cups sugar<\/li>\n<\/ul>\n<p><strong>Beat until melted<\/strong><\/p>\n<ul>\n<li>2 large eggs<\/li>\n<li>2 Tbsp. honey<\/li>\n<\/ul>\n<p><strong>Add baking soda into a glass with orange juice<\/strong><\/p>\n<ul>\n<li>1\/2 cup orange juice<\/li>\n<li>3\/4 tsp. baking soda<\/li>\n<\/ul>\n<p><strong>Ground walnut topping<\/strong><\/p>\n<ul>\n<li>6 Tbsp. sugar<\/li>\n<li>1 1\/2 cups of ground walnuts<\/li>\n<li>1 1\/2 tsp. cinnamon<\/li>\n<li>1\/2 tsp. ground clove<\/li>\n<\/ul>\n<p>Pre-heated 350F oven<\/p>\n<ol>\n<li>For the syrup, add all ingredients in a pot and bring to a boil and lower to a simmer and cook for 10 minutes, take off the heat and allow to cool.<\/li>\n<li>\u00a0Into a large bowl, add your wet ingredients (except for baking soda and orange juice). Mix for 5 minutes or until sugar is dissolved.<\/li>\n<li>Combine the flour with the other dry ingredients. Once sugar is dissolved, add the baking soda\/orange juice mixture then add dry to wet ingredients. Use you hands to mix the dough.<\/li>\n<li>Using your hands, roll the dough into small balls (about the size of apricots), then form them into quenelle shapes.<\/li>\n<li>Take your box grater (the side used to zest) and place a cookie on top of it. Press the cookie down a bit to form a grid pattern on the top of the cookie. Repeat this process for all the cookies.<\/li>\n<li>Place your cookies on a parchment paper lined baking sheet. Bake in a pre-heated oven (middle rack) for 30 minutes.<\/li>\n<li>Using a large slotted spoon or Spider, drop the hot cookies in batches into the cool syrup for 10 minutes to absorb the syrup then flip for 3 minutes on the other side. Reserve on a cooling rack and repeat until all the cookies are dunked in syrup.<\/li>\n<li>For the topping, add the above ingredients in a bowl mix well with a spoon. Brush each cookie with the remaining syrup and then sprinkle each cookie top with the walnut topping.
